4 salmon fillets (6 oz each)

Salt and pepper to taste

2 tablespoons olive oil

2 cups fresh spinach, chopped

1 cup heavy cream

1 clove garlic, minced

1 teaspoon lemon zest

1 tablespoon lemon juice

1/2 cup parmesan cheese, grated

1/4 teaspoon nutmeg

Optional: Fresh basil leaves for garnish

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Cook the Salmon: In a large skillet, heat the olive oil over medium heat. Place the salmon fillets skin-side down (if they have skin) and cook for 4-5 minutes. Flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.

      Make the Creamy Spinach Sauce: In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Then, add the chopped spinach and sauté until wilted, about 2-3 minutes.

        Add Cream and Flavor: Reduce the heat to low, pour in the heavy cream, and stir to combine. Add the lemon zest, lemon juice, parmesan cheese, and nutmeg, stirring until the cheese has melted and the sauce is creamy.

          Combine and Serve: Return the cooked salmon to the skillet, spoon the creamy sauce over the top, and heat for an additional minute to infused flavors.

            Garnish and Plate: Serve the salmon on a plate with the creamy spinach sauce generously drizzled over it. Garnish with fresh basil leaves for an aromatic touch.
