1 cup sake (can use a non-alcoholic sake alternative)

1 large grapefruit, juiced

1 tablespoon honey (or agave syrup)

1 cup sparkling water

Ice cubes

Grapefruit slices, for garnish

Fresh mint leaves, for garnish

Instructions
 

Start by juicing the grapefruit in a citrus juicer or by hand until you have about ½ cup of fresh grapefruit juice. Strain it through a fine mesh sieve to remove any pulp if desired.

    In a cocktail shaker, combine the freshly squeezed grapefruit juice, sake, and honey. Shake well until the honey is fully dissolved and all ingredients are mixed.

      Fill a glass or cocktail shaker with ice cubes and pour the mixture over the ice, filling each glass about halfway.

        Top off each glass with sparkling water and gently stir to combine, ensuring not to lose the fizz.

          Garnish each drink with a slice of grapefruit and a few fresh mint leaves for a touch of color and freshness.
