8 rice paper wrappers

200g cooked shrimp, peeled and deveined

1 cup vermicelli noodles, cooked according to package instructions

1 cup cucumber, julienned

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

1/4 cup hoisin sauce

1 tablespoon peanut butter

1 tablespoon lime juice

Start by preparing your dipping sauce. In a small bowl, whisk together hoisin sauce, peanut butter, and lime juice until smooth. Set aside.

    Fill a large shallow dish or shallow pan with warm water. Dip each rice paper wrapper in the warm water for about 10-15 seconds until it becomes soft but not too mushy.

      Lay the softened rice paper on a clean, flat surface or a damp kitchen towel.

        In the center of the rice paper, layer a small amount of vermicelli noodles, followed by a few shrimp, a small handful of julienned cucumber, carrots, and bell pepper. Add slices of avocado and a few mint and cilantro leaves on top.

          Season lightly with salt and pepper, being careful not to overfill the rolls.

            To wrap, fold the sides of the rice paper over the filling, then roll from the bottom up tightly but gently until you reach the top.

              Repeat the process for the remaining wrappers and filling ingredients until all are wrapped.

                Arrange the spring rolls on a serving platter. Serve with the prepared dipping sauce alongside.
