10 medium tomatillos, husked and rinsed

1 large onion, quartered

3 cloves garlic, unpeeled

2 jalapeños, halved and seeded (adjust for spice preference)

1/2 cup fresh cilantro leaves

Juice of 2 limes

Salt, to taste

1 tablespoon olive oil

A pinch of smoked paprika (optional, for a smoky flavor)

Instructions
 

Preheat your oven to 425°F (220°C).

    On a baking sheet, arrange the tomatillos, quartered onion, and whole garlic cloves. Drizzle everything with olive oil and sprinkle with salt.

      Roast in the preheated oven for about 20-25 minutes, or until the tomatillos are soft and slightly charred, and the onion is tender.

        Remove the baking sheet from the oven and let the vegetables cool for about 5 minutes.

          In a food processor, combine the roasted tomatillos, onions, and garlic (squeeze the garlic out of its skin). Add the jalapeños, cilantro, lime juice, and smoked paprika if using.

            Pulse the mixture until well blended but still slightly chunky. Taste and adjust seasoning with additional salt or lime juice if needed.

              Transfer the salsa to a bowl and let it sit for at least 30 minutes to allow flavors to meld before serving.
