Ingredients

2 cups rotini pasta

2 cups cooked chicken breast, shredded

1 cup roasted red peppers, chopped

1 cup cherry tomatoes, halved

½ cup black olives, sliced

½ cup feta cheese, crumbled

¼ cup red onion, finely chopped

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Begin by cooking the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

In a large mixing bowl, combine the cooled pasta, shredded chicken, chopped roasted red peppers, halved cherry tomatoes, sliced black olives, crumbled feta cheese, and finely chopped red onion.

In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, garlic powder, and a pinch of salt and pepper.

Pour the dressing over the pasta salad mixture and toss gently until all ingredients are well-coated.

Taste and adjust seasoning if necessary, adding more salt, pepper, or a splash more vinegar if desired.

Cover and refrigerate the salad for at least 30 minutes to let the flavors meld together.

Once ready to serve, give the pasta salad a gentle stir and garnish with fresh basil leaves.
