1 large head of green cabbage

3 tablespoons olive oil

Salt and pepper, to taste

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup ricotta cheese

1/4 cup cream cheese, softened

2 green onions, finely sliced

1 teaspoon dried dill

1 teaspoon garlic powder

1/2 cup shredded phyllo dough (or store-bought phyllo)

1 egg, beaten (for egg wash)

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the cabbage: Remove the outer leaves of the cabbage and slice it into thick steaks (about 1-inch thick). Brush each side of the cabbage steaks with olive oil, and season with salt and pepper.

      Roast the cabbage: Place the cabbage steaks on the prepared baking sheet and roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, flipping halfway through.

        Prepare the filling: In a medium bowl, combine the chopped spinach, crumbled feta, ricotta, cream cheese, sliced green onions, dried dill, garlic powder, and a pinch of salt and pepper. Mix until well combined.

          Assemble the melts: Once the cabbage steaks are roasted, take them out of the oven and carefully spoon the spinach and cheese filling on top of each steak, spreading it evenly.

            Add phyllo topping: Sprinkle the shredded phyllo dough generously over the filling on each cabbage steak. Brush the phyllo dough with the beaten egg to create a golden crust.

              Return to the oven: Place the assembled cabbage melts back into the oven for an additional 10-12 minutes, or until the phyllo is crispy and golden-brown.

                Serve hot: Remove from the oven and let cool for a few minutes. Slice the cabbage steaks into halves or quarters and serve warm.
