3 medium beets, scrubbed and trimmed

4 cups mixed greens (arugula, spinach, and spring mix)

1/2 cup goat cheese, crumbled

1/2 cup walnuts

1/4 cup maple syrup

1/4 cup balsamic vinegar

1/4 cup olive oil

1 teaspoon Dijon mustard

Salt and freshly ground black pepper to taste

Fresh herbs (such as chives or parsley) for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    Wrap each beet in aluminum foil and place on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until the beets are tender when pierced with a fork. Once cooked, let them cool, then peel and slice into wedges.

      While the beets are roasting, prepare the candied walnuts. In a medium skillet, over medium heat, combine the walnuts and maple syrup. Stir continuously for about 5-7 minutes until the walnuts are caramelized. Remove from heat and let cool on a parchment-lined plate.

        In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, salt, and pepper to create the dressing.

          In a large bowl, toss the mixed greens with half of the dressing until well coated.

            To assemble the salad, plate the dressed greens and top with the beet wedges, crumbled goat cheese, and candied walnuts. Drizzle the remaining dressing over the top.

              Garnish with fresh herbs for added flavor and color.
