12 oz fresh cheese ravioli

1 bunch asparagus, trimmed and cut into 2-inch pieces

1 pint cherry tomatoes, halved

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)

Salt and pepper to taste

Fresh basil for garnish

Grated Parmesan cheese for serving (optional)

Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Drain and set aside, reserving a splash of the pasta water.

    Sauté the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus pieces and sauté for about 4-5 minutes until they start to become tender but are still vibrant green.

      Add Garlic and Tomatoes: To the skillet, add the minced garlic and halved cherry tomatoes. Cook for another 3-4 minutes until the tomatoes begin to soften and release their juices. Stir frequently to prevent the garlic from burning.

        Combine Ingredients: Gently fold the cooked ravioli into the skillet with the asparagus and tomatoes. If the mixture looks dry, add a splash of reserved pasta water and the remaining tablespoon of olive oil. Toss everything to combine and heat through.

          Season and Serve: Sprinkle the dried herbs over the mixture, and season with salt and pepper to taste. Stir well to incorporate.

            Garnish: Plate the ravioli, adding fresh basil leaves on top for a pop of color and added flavor. Serve with grated Parmesan cheese if desired.
