1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries, plus extra for garnish

1 tablespoon lemon juice

1/2 cup whipped cream

Instructions
 

In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are well coated and resemble wet sand.

    Line a mini muffin tin with paper liners. Press a tablespoon of the graham cracker mixture into the bottom of each liner to create a firm crust.

      In a separate large bowl, beat the softened cream cheese until creamy and smooth using an electric mixer.

        Gradually add the powdered sugar while mixing, followed by the vanilla extract and lemon juice. Mix until well combined.

          Gently fold in the fresh raspberries and whipped cream into the cream cheese mixture, being careful not to crush the raspberries too much.

            Spoon the cheesecake filling over the graham cracker crusts in the mini muffin tin, filling each liner to the top.

              Refrigerate the cheesecake bites for at least 2 hours or until set.

                Once set, carefully remove the cheesecake bites from the muffin tin. Garnish each bite with a fresh raspberry on top before serving.
