2 packs of instant ramen noodles (discard seasoning packets)

1 tablespoon sesame oil

1 cup broccoli florets

1 cup bell pepper, sliced (any color)

1 cup snap peas

1 carrot, julienned

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sriracha (optional for heat)

Toasted sesame seeds for garnish

Instructions
 

Start by cooking the instant ramen noodles according to the package instructions, but only for half the suggested time to keep them al dente. Drain and set aside.

    In a large skillet or wok, heat the sesame oil over medium-high heat.

      Add the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.

        Toss in the broccoli, bell pepper, snap peas, and carrot. Stir-fry the vegetables for 4-5 minutes until they are vibrant and slightly tender but still crisp.

          Add the cooked noodles to the skillet along with the chopped green onions.

            Pour in the soy sauce, hoisin sauce, rice vinegar, and sriracha (if using). Toss everything together to ensure the noodles and vegetables are evenly coated in the sauce. Stir-fry for an additional 2-3 minutes.

              Remove from heat and let it cool slightly before serving.

                Garnish with toasted sesame seeds on top for an added crunch and flavor boost.
