1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, diced

1 cucumber, finely chopped

1 cup fresh parsley, finely chopped

1/2 cup fresh mint leaves, finely chopped

1/4 cup red onion, finely chopped

Juice and zest of 1 lemon

Juice and zest of 1 orange

3 tablespoons olive oil

Salt and pepper to taste

Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid is absorbed.

    Cool Quinoa: Once cooked, remove from the heat and allow to cool for about 10 minutes. Fluff with a fork and set aside.

      Prepare Vegetables: In a large mixing bowl, combine the diced cherry tomatoes, chopped cucumber, parsley, mint, and red onion.

        Make Dressing: In a small bowl, whisk together the lemon juice, orange juice, lemon zest, orange zest, and olive oil. Season with salt and pepper to taste.

          Combine: Add the cooled quinoa to the vegetable mixture. Drizzle the dressing over the top and mix gently until everything is evenly coated.

            Chill: Cover and let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Serve: Give it one last gentle toss before serving.
