Ingredients
  

1 cup quinoa, rinsed

2 cups almond milk (or your choice of milk)

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup dried fruit (raisins, cranberries, or chopped dates)

Fresh berries for topping (strawberries, blueberries, or raspberries)

Pinch of salt

Instructions
 

In a medium saucepan, combine the rinsed quinoa, almond milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt.

    Bring the mixture to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and has absorbed the liquid.

      Once cooked, remove from heat and let it sit, covered, for about 5 minutes to allow the flavors to meld.

        Fluff the quinoa with a fork and stir in the chopped nuts and dried fruit.

          To serve, spoon the quinoa mixture into bowls and top with fresh berries. Adjust sweetness with more maple syrup if desired.
