Ingredients

2 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1/2 cup fresh basil, chopped

1/4 cup mozzarella cheese, diced

2 tablespoons balsamic glaze

2 medium zucchinis, spiralized into zoodles

3 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Instructions

Prepare the Chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and a tablespoon of olive oil. Place them in a baking dish.

Make the Bruschetta Topping: In a bowl, combine the halved cherry tomatoes, chopped basil, diced mozzarella, minced garlic, and balsamic glaze. Season with salt and pepper. Mix gently until all ingredients are coated.

Bake the Chicken: Spread the bruschetta mixture evenly over the chicken breasts. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and juices run clear (internal temperature should reach 165°F or 74°C).

Prepare the Zoodles: While the chicken is baking, heat the remaining olive oil in a skillet over medium heat. Add the spiralized zoodles and sauté for 3-5 minutes until tender but still slightly crisp. Season with salt and pepper to taste.

Serve: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the bruschetta chicken over a bed of zoodles, drizzling any extra juices from the baking dish on top for added flavor.
