Ingredients

1 cup rolled oats

2 cups water or milk (or a blend of both)

1/2 cup pure pumpkin puree

1 teaspoon pumpkin pie spice

1 tablespoon maple syrup (or honey)

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/4 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh banana slices or apple slices for topping

Instructions

In a medium saucepan, bring the water (or milk) to a simmer over medium heat.

Stir in the rolled oats, salt, and pumpkin puree. Mix well to combine.

Add the pumpkin pie spice and vanilla extract, stirring again to incorporate evenly.

Reduce the heat to low and let the oatmeal cook for about 5 minutes, stirring occasionally, until thick and creamy.

Once the oatmeal has reached your desired consistency, remove it from heat. Stir in the maple syrup for sweetness.

If using, fold in the chopped nuts and dried fruit for added texture and flavor.

Serve the oatmeal warm in bowls, topping each with fresh banana or apple slices for an extra touch of flavor and nutrition.
