1 lb chicken breast, thinly sliced

1/4 cup soy sauce (low sodium)

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 teaspoons fresh ginger, grated

2 cloves garlic, minced

1 bell pepper (red or yellow), thinly sliced

1 cup snap peas, trimmed

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until well combined. This will be your teriyaki marinade.

    Add the sliced chicken to the marinade, ensuring all pieces are evenly coated. Allow it to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

      Heat a large skillet or wok over medium-high heat. Once hot, add the marinated chicken along with all the marinade.

        Cook the chicken for about 5-7 minutes, stirring frequently, until it turns golden brown and is cooked through.

          Add the sliced bell pepper and snap peas to the skillet, and stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

            Remove from heat and serve the teriyaki chicken over a bed of cooked jasmine rice.

              Garnish with chopped green onions and a sprinkle of sesame seeds for added flavor and crunch.
