Ingredients

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

1 can (20 oz) sliced pineapple, drained and juice reserved

1/2 cup maraschino cherries, drained

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon vanilla extract

2 large eggs

1/2 cup granulated sugar

1/4 cup pineapple juice (from the canned pineapple)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.

In a small bowl, mix the melted butter and brown sugar until well combined; pour this mixture into the bottom of the prepared baking pan evenly.

Arrange the sliced pineapple decoratively on top of the butter-sugar layer. Place a maraschino cherry in the center of each pineapple slice for added flavor and color.

In a separate large bowl, whisk together the flour, baking powder, and salt.

In another bowl, combine the eggs, granulated sugar, vanilla extract, and pineapple juice. Beat until light and frothy.

Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined and smooth.

Pour the batter over the pineapple arrangement in the baking pan, ensuring it covers the pineapple evenly.

Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, let the bars cool in the pan for 10 minutes. Then, carefully invert them onto a serving plate.

Allow the bars to cool completely before cutting into squares. Serve and enjoy the tropical explosion of flavors!
