2 cups fresh pineapple chunks (or canned, drained)

1 cup shredded sharp cheddar cheese

1 cup crushed buttery crackers (such as Ritz)

½ cup unsweetened shredded coconut

½ cup sugar

1/4 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the pineapple chunks, shredded cheddar cheese, crushed crackers, and shredded coconut. Mix well and set aside.
