Ingredients

1 large can (20 oz) crushed pineapple, drained

1 cup sharp cheddar cheese, shredded

1 cup crushed butter crackers (like Ritz)

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1/4 cup chopped pecans (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the drained crushed pineapple and lemon juice. Make sure the pineapple is well-drained to avoid excess moisture in the casserole.

Add the melted butter, brown sugar, cinnamon, and nutmeg to the bowl. Stir until thoroughly combined.

Fold in the shredded sharp cheddar cheese, mixing well to ensure the cheese is evenly distributed throughout the pineapple mixture.

In a separate bowl, combine the crushed butter crackers and chopped pecans (if using). Pour this mixture into the casserole dish, reserving about 1/4 cup for topping the casserole.

Carefully spread the pineapple and cheese mixture over the layer of crushed crackers in the casserole dish.

Sprinkle the reserved crushed crackers on top of the casserole to create a crunchy topping.

Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

Once baked, remove from the oven and let it cool for about 5 minutes before serving.

                    Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 6-8

                      - Presentation Tips: Serve in the casserole dish itself for a rustic look. Garnish with a sprig of fresh mint or chopped parsley for a pop of color. For added flair, serve with a scoop of vanilla ice cream on the side to balance the sweet and savory flavors!
