2 cups fresh pineapple, diced (or 1 can of pineapple chunks, drained)

1 cup cooked white rice

1 cup shredded sharp cheddar cheese

½ cup brown sugar

¼ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup crushed cornflakes

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with cooking spray or butter.

    In a large mixing bowl, combine the diced pineapple (or drained canned pineapple) and cooked rice. Mix well.

      In a separate bowl, whisk together the melted butter, brown sugar, eggs, vanilla extract, and cinnamon until smooth.
