2 cups rotini pasta

1 pound boneless, skinless chicken breasts, diced

1 cup broccoli florets (fresh or frozen)

1 cup carrots, diced

1 can (15 oz) cream of chicken soup

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.

      Prepare the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts, season with garlic powder, onion powder, salt, and pepper, and cook until the chicken is browned and fully cooked (about 5-7 minutes).

        Combine the ingredients: In a large mixing bowl, combine the cooked pasta, chicken, broccoli, carrots, cream of chicken soup, milk, and 1 cup of shredded cheddar cheese. Stir until well combined.

          Transfer to a baking dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly and sprinkle additional shredded cheddar cheese on top.

            Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden.

              Cool and serve: Once done, let the dish cool for a few minutes before serving.
