12 oz cheese tortellini

1 cup cherry tomatoes, halved

1/2 cup fresh mozzarella balls, halved

1/4 cup black olives, sliced

1/2 cup fresh basil, roughly chopped

1/4 cup pesto sauce (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Grated Parmesan cheese for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package directions, usually around 3-5 minutes. Once cooked, drain and rinse under cold water to cool down.
