2 cups ripe peaches, peeled and diced

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

½ cup Greek yogurt

1 teaspoon ground cinnamon

¼ cup brown sugar (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.

          Gradually add the dry ingredients to the wet mixture, alternating with Greek yogurt until just combined. Do not overmix.

            Fold in the diced peaches gently, ensuring they’re evenly distributed throughout the batter.

              Pour the batter into the prepared cake pan and smooth the surface with a spatula.

                Sprinkle the brown sugar evenly over the top of the batter.

                  Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

                    Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
