Ingredients
  

2 cups fresh or frozen peas

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup fresh mint leaves, packed

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon lemon juice

½ cup heavy cream or coconut cream (optional, for topping)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the peas and cook for 2-3 minutes, allowing them to warm up.

        Pour in the vegetable broth and bring the mixture to a gentle simmer. Let it cook for about 10 minutes, or until the peas are tender.

          Remove the pot from heat and add the fresh mint leaves. Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the mixture to a blender (in batches if necessary) to achieve a silky texture.

            Season the soup with salt, pepper, and lemon juice. Blend again briefly to incorporate the seasonings.

              If desired, stir in the heavy cream or coconut cream for a richer flavor.

                Reheat gently over low heat if needed, but do not bring to a boil.
