300g pasta (your choice, like fettuccine or penne)

400g butternut squash, peeled and cubed

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

¼ teaspoon nutmeg

1 tablespoon olive oil

Salt and pepper to taste

Fresh sage leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Squash: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Cook the Butternut Squash: Add the cubed butternut squash to the skillet. Pour in the vegetable broth, cover, and let it simmer for about 10-15 minutes, or until the squash is tender and can be easily pierced with a fork.

        Blend the Sauce: Once the squash is cooked, transfer the mixture to a blender or use an immersion blender to purée until smooth. If it's too thick, add a bit of the reserved pasta water until you reach your desired consistency.

          Combine Ingredients: Return the puréed sauce to the skillet. Stir in the heavy cream (or coconut cream), nutmeg, salt, and pepper. Adjust seasoning to taste. Let the sauce heat through over low heat.

            Mix with Pasta: Add the cooked pasta to the sauce, tossing gently to coat all the noodles evenly. If needed, add more reserved pasta water to loosen the sauce.
