8 oz Pancit Canton noodles (egg noodles)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 medium onion, sliced

1 cup carrots, julienned

1 cup bell peppers (red and green), sliced

1 cup cabbage, shredded

1 cup snap peas

1 cup cooked shrimp (or chicken, tofu for a vegetarian option)

3 tablespoons soy sauce

2 tablespoons oyster sauce (or mushroom sauce for vegetarian)

1 tablespoon sesame oil

1 teaspoon ground black pepper

2 green onions, chopped for garnish

Lemon or calamansi wedges for serving

Instructions
 

Cook the Pancit Canton noodles according to package instructions until al dente. Drain and set aside.

    In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced onion, sautéing until fragrant and the onion becomes translucent, about 2-3 minutes.

      Add the carrots and cook for another 3 minutes, stirring frequently.

        Stir in the bell peppers and snap peas, cooking for another 2-3 minutes until they are slightly tender but still crisp.

          Incorporate the cabbage into the mix and stir-fry for an additional minute.

            Add the cooked shrimp (or chicken/tofu) to the pan, tossing everything together.

              Pour in the soy sauce, oyster sauce, and sesame oil. Stir to coat all the ingredients evenly in the sauces, cooking for another 2 minutes.

                Introduce the cooked Pancit Canton noodles to the mixture, gently tossing to combine all ingredients, ensuring the noodles are heated through and well mixed, about 2-3 minutes.

                  Season with ground black pepper.

                    Remove from heat and serve hot, garnished with chopped green onions and lemon or calamansi wedges on the side for a zesty squeeze.
