2 ripe bananas

2 large eggs

1 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk (or any plant-based milk)

1 teaspoon vanilla extract

Coconut oil or butter for cooking

Instructions
 

In a mixing bowl, mash the ripe bananas until smooth using a fork or a potato masher.

    Add the eggs to the mashed bananas and whisk until fully combined.

      In a food processor or blender, add the rolled oats, baking powder, cinnamon, and salt. Blend until the oats become a fine flour consistency.

        Pour the oat flour mixture into the banana and egg mixture. Add the milk and vanilla extract, and stir until a batter forms. If the batter is too thick, add a little more milk to reach your desired consistency.

          Heat a non-stick skillet over medium heat and add a small amount of coconut oil or butter.

            Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Flip the pancake and cook for another 1-2 minutes until golden brown.

                Repeat with remaining batter, adding more oil or butter to the skillet as needed.
