6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon apple cider vinegar

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and black pepper to taste

Fresh chives, finely chopped (for garnish)

Optional: a few dashes of hot sauce for a spicy kick

Instructions
 

Begin by placing the eggs in a saucepan and covering them with cold water. Bring the water to a rolling boil over high heat.

    Once boiling, turn off the heat, cover the saucepan, and let the eggs sit for about 12 minutes.

      After 12 minutes, transfer the eggs to an ice bath (a bowl of ice water) and let them cool for about 5 minutes. This makes peeling easier.

        Carefully peel the eggs under running cool water to remove any stubborn shell pieces. Rinse them to ensure all shell bits are gone.

          Cut each egg in half lengthwise and gently scoop out the yolks into a mixing bowl, placing the whites aside.

            Mash the yolks with a fork until fine. Then, add the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and black pepper. Mix until smooth and creamy, adjusting seasoning to taste.

              Using a piping bag or a small spoon, fill each egg white half with the yolk mixture.

                For extra flair, sprinkle additional smoked paprika on top and garnish with finely chopped chives. If desired, add a few dashes of hot sauce for heat.
