4 large yellow onions, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon brown sugar

1 teaspoon fresh thyme leaves

Salt and pepper to taste

1 sheet of puff pastry, thawed

1 egg, beaten (for egg wash)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large, oven-safe skillet, heat the olive oil and butter over medium heat.

      Add the sliced onions and season with salt and pepper. Sauté until the onions are soft and lightly caramelized, about 10-15 minutes.

        Sprinkle in the brown sugar and thyme leaves, continuing to cook until the onions are deep golden brown and caramelized, about 5 more minutes.

          Remove the skillet from heat and let the onion mixture cool slightly while you prepare the pastry.

            Roll out the puff pastry on a lightly floured surface to fit the size of your skillet.

              Drape the puff pastry over the onions, tucking the edges down around the onions. Make sure to cut a few slits in the pastry to allow steam to escape.

                Brush the top of the pastry with the beaten egg for a golden finish.

                  Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.

                    Carefully invert the tarte onto a serving plate while hot. Tap the skillet to release any stuck onions.
