Ingredients

2 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 cup green beans, trimmed and blanched

2 hard-boiled eggs, quartered

1 can (about 5 oz) tuna in olive oil, drained

1/2 cup Kalamata olives, pitted

1 medium cucumber, sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh basil leaves, torn

3 tablespoons Dijon mustard

4 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

Salt and pepper to taste

Instructions

Start by preparing the ingredients: blanch the green beans in boiling water for about 2-3 minutes, then transfer them to an ice bath to retain their crispness.

In a large mixing bowl, combine the mixed greens, halved cherry tomatoes, blanched green beans, quartered hard-boiled eggs, drained tuna, Kalamata olives, sliced cucumber, and red onion.

In a separate small bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, salt, and pepper to create a smooth vinaigrette. Adjust seasoning to taste.

Drizzle the vinaigrette over the salad mixture and gently toss until everything is evenly coated.

Finally, garnish the salad with torn fresh basil leaves for added flavor and visual appeal.
