Ingredients

1 cup fresh spinach, chopped

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup goat cheese, crumbled

2 large eggs

1/2 cup milk (or plant-based milk)

1/4 cup olive oil

1 tablespoon honey (optional for a hint of sweetness)

2 tablespoons grated Parmesan cheese (for topping)

Instructions

Preheat your oven to 350°F (175°C). Line a muffin tray with paper liners or lightly grease the cups.

Prepare the dry ingredients: In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, and black pepper. Set aside.

Mix the wet ingredients: In another bowl, whisk together the eggs, milk, olive oil, and honey until well combined.

Combine ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay!

Fold in the spinach and goat cheese: Gently fold the chopped spinach and crumbled goat cheese into the muffin batter until evenly distributed.

Fill the muffin tins: Spoon the batter into the prepared muffin cups, filling each about 2/3 full.

Sprinkle with Parmesan: Top each muffin with a pinch of grated Parmesan cheese for a delicious crust.

Bake: Place the muffin tray in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Cool and serve: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 muffins

                      - Presentation Tips: Serve the muffins warm with a dollop of sour cream or a sprinkling of fresh herbs on top for added flavor and visual appeal. Enjoy as a snack or a delicious side for brunch!
