1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup brewed espresso, cooled

1/2 cup whole milk

1/2 cup coconut milk

1/2 cup sweetened condensed milk

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon chocolate shavings (for garnish)

1 teaspoon cocoa powder (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.

    In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt; set aside.

      In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

        Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract and cooled espresso.

          Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, starting and finishing with the flour mixture. Mix until just combined.

            Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

              Let the cake cool in the pan for about 10 minutes, then remove it from the pan and cool completely on a wire rack.

                Once cooled, combine the coconut milk and sweetened condensed milk in a bowl. Poke holes all over the top of the cake using a fork or skewer, then pour the milk mixture evenly over the cake.

                  For the whipped topping, in a clean mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the soaked cake evenly.

                    Garnish with chocolate shavings and a dusting of cocoa powder on top.

                      Chill the cake in the refrigerator for at least 2 hours before serving for the flavors to meld.
