1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon instant coffee granules

1 pint coffee or mocha flavored ice cream

1/2 cup chocolate chips (optional)

1/2 cup crushed walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.

      Cream Butter and Sugar: In a large mixing bowl, use a hand mixer to cream the softened butter and brown sugar together until light and fluffy.

        Add Wet Ingredients: Mix in the egg, vanilla extract, and instant coffee granules until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in chocolate chips and crushed walnuts for added texture.

            Scoop Cookies: Use a cookie scoop or tablespoon to place dollops of dough onto the prepared baking tray, leaving space between each cookie as they will spread while baking.
