6 large eggs

1 cup milk

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup diced vegetables (bell peppers, spinach, and mushrooms work well)

1 cup diced cooked ham or cooked bacon (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package of pre-made mini pastry shells (or phyllo dough)

Fresh herbs for garnish (like chives or parsley)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, whisk together the eggs and milk until well combined.

      Stir in the shredded cheese, diced vegetables, and diced meat (if using).

        Add garlic powder, onion powder, salt, and pepper to the egg mixture. Mix well until fully combined.

          Place the mini pastry shells on a baking sheet, making sure they are evenly spaced.

            Carefully pour the egg mixture into each pastry shell until they are about three-quarters full. Be careful not to overfill as the egg mixture will puff up while baking.

              Bake in the preheated oven for 20-25 minutes or until the egg is set and the tops are gently golden.

                Remove from the oven and let them cool for a few minutes before transferring to a serving platter.

                  Garnish with fresh herbs for an extra pop of color.
