4 large egg whites

1 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon cornstarch

1 teaspoon white vinegar

1 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh fruits (kiwi, strawberries, blueberries, and passion fruit) for topping

Mint leaves for garnish

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. Draw 4-inch circles on the parchment as a guide, flipping the paper over afterwards.

    In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form.

      Gradually add the granulated sugar, a tablespoon at a time, and continue whipping until the mixture is glossy and forms stiff peaks.

        Gently fold in the vanilla extract, cornstarch, and white vinegar until fully incorporated.

          Spoon the meringue mixture onto the prepared circles on the parchment paper, creating a slight well in the center for the filling.

            Bake for 1 hour, then turn off the oven and let the meringues cool in the oven for another hour to avoid cracking.

              While the meringues cool, whip the heavy cream with powdered sugar until soft peaks form.

                Once the meringues are cooled, carefully remove them from the parchment.

                  Spoon the whipped cream into the centers of each mini pavlova and top with a colorful assortment of fresh fruits.

                    Finish with a sprig of mint on each pavlova for an extra touch of freshness.
