Prepare the Shortbread Base: Preheat your oven to 350°F (175°C). In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy. Gradually mix in the flour and salt until a dough forms.

    Bake the Shortbread: Press the dough evenly into the bottom of a lined 9x9 inch baking pan. Prick the surface with a fork to prevent bubbling. Bake for about 20-25 minutes or until lightly golden. Allow it to cool completely in the pan.

      Make the Caramel: In a saucepan over medium heat, combine the brown sugar, condensed milk, butter, vanilla extract, and sea salt. Stir consistently until the mixture comes to a gentle boil. Continue to cook for about 5-7 minutes, stirring constantly, until the caramel thickens.

        Assemble the Layers: Pour the caramel layer over the cooled shortbread base, spreading it evenly. Chill in the refrigerator for about 1 hour to set.

          Prepare the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

            Finish the Shortbread: Pour the melted chocolate over the set caramel layer, ensuring it covers the caramel evenly. While the chocolate is still warm, sprinkle a touch of sea salt on top for an extra flavor boost.
