Ingredients

4 ears of fresh corn, husked

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/2 cup crumbled feta cheese

1/4 cup fresh cilantro, chopped

1 jalapeño, finely minced (optional, adjust for spice)

2 tablespoons mayonnaise

2 tablespoons lime juice

1 teaspoon chili powder

Salt and pepper to taste

Instructions

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly onto the grill. Cook for about 10-12 minutes, turning occasionally, until charred and cooked through. Remove from the grill and allow to cool slightly.

Cut the Corn Kernels: Once the corn is cool enough to handle, carefully slice the kernels off the cob and place them in a large mixing bowl.

Combine Ingredients: Add the halved cherry tomatoes, diced red onion, crumbled feta, chopped cilantro, and minced jalapeño to the bowl with the corn.

Prepare the Dressing: In a separate smaller bowl, whisk together the mayonnaise, lime juice, chili powder, and a pinch of salt and pepper until smooth.

Mix It All Together: Pour the dressing over the corn mixture and toss gently until the salad is well coated. Adjust seasoning to taste with additional salt, pepper, or lime juice.

Chill: For the best flavor, cover the salad and let it chill in the refrigerator for at least 30 minutes before serving.
