Mediterranean Flatbread Pizza with Tzatziki Drizzle

4 pieces of naan or flatbread

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

For the Tzatziki Drizzle:

1 cup Greek yogurt

1/2 cucumber, grated and drained

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped

Salt and pepper to taste

Instructions
 

Prepare the Tzatziki: In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Season with salt and pepper, then set aside in the refrigerator to chill.

    Preheat Oven: Preheat your oven to 400°F (200°C).

      Prepare the Flatbread: Place the naan or flatbread on a baking sheet. Brush each piece lightly with olive oil and sprinkle with dried oregano, salt, and pepper.

        Assemble: Evenly distribute the cherry tomatoes, fresh spinach, sliced olives, and red onion over the flatbreads. Sprinkle the crumbled feta cheese generously on top.

          Bake: Bake in the preheated oven for 12-15 minutes, or until the edges of the flatbread are crisp and the cheese is slightly golden.

            Drizzle: Once out of the oven, remove the flatbreads and allow them to cool for a minute. Drizzle the cold tzatziki sauce over the top before serving.
