Ingredients

1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons lemon juice

2 teaspoons dried oregano

2 teaspoons garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 bell pepper (red or yellow), cut into 1-inch pieces

1 red onion, cut into wedges

Wooden skewers (soaked in water for 30 minutes)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt to taste

Instructions

Marinate the Chicken: In a large bowl, combine the olive oil, lemon juice, oregano, garlic powder, smoked paprika, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate for at least 30 minutes or up to 2 hours in the refrigerator for maximum flavor.

Prepare the Tzatziki: In a separate bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, fresh dill, lemon juice, and salt. Mix well, adjust seasoning to taste, and refrigerate until ready to serve. This allows the flavors to meld.

Assemble the Skewers: Thread the marinated chicken, bell pepper pieces, and red onion wedges onto the soaked wooden skewers, alternating ingredients for a colorful presentation.

Grill the Skewers: Preheat your grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Serve: Once cooked, remove the skewers from the grill. Serve them immediately with a generous side of tzatziki sauce for dipping.

Garnish: Optionally, garnish with fresh lemon wedges and sprigs of dill for a vibrant touch.

              Prep Time: 10 minutes | Total Time: 50 minutes | Servings: 4

                - Presentation Tips: Arrange the chicken skewers on a large serving platter, drizzle with a little extra olive oil, and place the tzatziki in a small bowl in the center for easy dipping! You can also sprinkle some extra dill over the skewers for an elegant finish.
