1 pound carrots, peeled and cut into sticks

3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped for garnish

4 medium russet potatoes, cut into wedges

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh rosemary, chopped for garnish

1 pound Brussels sprouts, halved

2 tablespoons olive oil

3 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper, to taste

Toasted pecans, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until well combined.

      Add the carrot sticks to the bowl and toss them in the honey-mustard mixture until evenly coated.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.

            Remove from the oven and garnish with freshly chopped parsley before serving.

                  Crispy Garlic Herb Potato Wedges 🥔🧄

                    Preheat the oven to 425°F (220°C).

                      In a large bowl, combine the potato wedges with olive oil, minced garlic, oregano, paprika, salt, and pepper. Toss until the potatoes are fully coated.

                        Arrange the wedges in a single layer on a baking tray, ensuring they’re not overcrowded.

                          Bake for 35-40 minutes, turning halfway through, until the wedges are golden brown and crispy on the outside.

                            Once baked, remove from the oven and sprinkle with chopped rosemary before serving.

                                              Top with toasted pecans before serving for a crunchy texture.
