4 large egg yolks

1/2 cup granulated sugar

1/2 cup mascarpone cheese

1 cup heavy whipping cream

1/4 cup matcha powder (plus extra for dusting)

1 cup brewed and cooled strong green tea

12 ladyfinger cookies (savoiardi)

1 teaspoon vanilla extract

A pinch of salt

Prepare the Matcha Mixture: In a small bowl, whisk together the matcha powder and 1/4 cup hot water until smooth. Set aside to cool.

    Make the Cream Mixture: In a medium bowl, beat the egg yolks and granulated sugar together with an electric mixer on medium speed until thick and pale, about 5 minutes. Add mascarpone cheese and matcha mixture to the yolk mixture, and mix until fully incorporated.

      Whip the Cream: In a separate bowl, whip the heavy cream, vanilla extract, and a pinch of salt with an electric mixer until soft peaks form. Gently fold the whipped cream into the matcha and mascarpone mixture until no streaks remain.

        Dip Ladyfingers: Quickly dip each ladyfinger into the brewed green tea, ensuring they're moistened but not soggy. Lay them side by side in a 9x9 inch square dish.

          Layer the Tiramisu: Spread half of the matcha cream mixture over the layer of ladyfingers. Repeat the process with another layer of dipped ladyfingers followed by the remaining matcha cream.

            Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best flavor and texture.

              Serve: Once chilled, dust the top with additional matcha powder just before serving. Cut into squares and enjoy!
