1 cup glutinous (sticky) rice

1 ½ cups coconut milk

½ cup sugar

¼ teaspoon salt

2 ripe mangoes, peeled and sliced

Sesame seeds or mung beans for garnish (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Rinse the glutinous rice under cold water until the water runs clear, about 3-4 times. This helps remove excess starch and ensures a sticky texture.

    Soak the rice in water for at least 4 hours or overnight for the best results. After soaking, drain the rice.

      Set up a steamer by bringing water to a boil in a pot. Line the steamer basket with cheesecloth or parchment paper, then add the drained rice evenly in the basket.

        Steam the rice for about 25-30 minutes or until translucent and tender. While it steams, you can prepare the coconut sauce.

          In a saucepan over medium heat, combine the coconut milk, sugar, and salt, stirring until the sugar has dissolved and the mixture is well combined. Do not let it boil.

            Reserve about ⅓ cup of the coconut sauce for drizzling later. Pour the remaining sauce over the cooked sticky rice and mix well. Allow it to sit for about 15 minutes to absorb the flavor.

              To serve, place a portion of the sticky rice on a plate, fan the sliced mangoes next to it, and drizzle with the reserved coconut sauce.

                Optionally, sprinkle with sesame seeds or mung beans for added texture and garnish with fresh mint leaves for a pop of color.
