4 ripe mangoes, peeled and diced

1/2 cup fresh lime juice

1/2 cup coconut milk

1/2 cup sugar (adjust to taste)

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

In a blender, combine the diced mangoes, fresh lime juice, coconut milk, sugar, vanilla extract, and a pinch of salt.

    Blend until smooth and creamy. Taste the mixture and adjust the sweetness if necessary by adding more sugar.

      Pour the blended mixture into a shallow dish or a glass baking pan.

        Place the dish in the freezer and allow it to freeze for about 1 hour.

          After 1 hour, use a fork to scrape and stir the mixture to break up any ice crystals forming.

            Return the dish to the freezer for another 2-3 hours, or until completely firm.

              Before serving, scoop the sorbet into bowls or cone-shaped cups. If the sorbet is too hard, let it sit at room temperature for a few minutes to soften.
