Mango Lassi Chia Bowl

Ingredients
  

1 cup Greek yogurt

1 ripe mango, peeled and diced

1 cup almond milk (or any milk of your choice)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon ground cardamom

1/4 teaspoon vanilla extract

Fresh mint leaves for garnish

Extra mango slices for topping

Optional: toasted coconut flakes or granola for crunch

Instructions
 

In a blender, combine the Greek yogurt, diced mango, almond milk, honey, ground cardamom, and vanilla extract. Blend until smooth and creamy.

    In a medium bowl, whisk together the chia seeds and the mango yogurt mixture until well combined.

      Cover the bowl and refrigerate for at least 30 minutes (or overnight) to let the chia seeds swell and create a pudding-like texture.

        After chilling, stir the chia bowl to loosen it up a bit. If it's too thick, add a little more almond milk until you reach your desired consistency.

          To serve, spoon the chia mixture into serving bowls. Top with extra mango slices, a sprinkle of toasted coconut flakes or granola, and fresh mint leaves for garnish.
