1 ripe mango, diced

1 can (15 oz) chickpeas, rinsed and drained

1 red bell pepper, diced

½ small red onion, finely chopped

1 cucumber, diced

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon honey or agave syrup

Salt and pepper to taste

Optional: ½ teaspoon ground cumin for extra flavor

Instructions
 

In a large mixing bowl, combine the diced mango, chickpeas, red bell pepper, red onion, cucumber, and avocado. Gently mix them to avoid mashing the avocado.

    In a separate small bowl, whisk together the lime juice, olive oil, honey (or agave syrup), and ground cumin, if using. Season with salt and pepper to taste.

      Pour the dressing over the salad ingredients and toss gently until everything is coated evenly.
