Ingredients

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

1/4 cup fresh basil, chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (for topping)

Instructions

Preheat your oven to 375°F (190°C).

In a small bowl, mix together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. This will be your marinade for the chicken.

Place the chicken breasts in a baking dish and pour the marinade evenly over them. Ensure each piece is well-coated.

Bake the chicken in the preheated oven for 20 minutes.

While the chicken is baking, prepare the bruschetta topping. In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, chopped basil, red pepper flakes (if using), and a pinch of salt and pepper. Toss gently to combine.

After the chicken has baked for 20 minutes, remove it from the oven and carefully spoon the bruschetta mixture over each chicken breast.

Sprinkle the grated Parmesan cheese on top of the bruschetta-covered chicken.

Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Let the dish rest for a few minutes before serving to allow the juices to settle.

                      - Presentation Tips: Serve each chicken breast on a plate, drizzled with any remaining juices from the baking dish. Garnish with additional fresh basil leaves for a pop of color.
