8 oz whole wheat spaghetti

2 medium chicken breasts, boneless and skinless

2 tablespoons olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup fresh basil leaves, chopped

1/4 cup fresh parsley, chopped

1 teaspoon lemon zest

2 tablespoons lemon juice

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Instructions
 

Begin by cooking the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside, reserving a 1/2 cup of pasta water.

    While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest before slicing it into bite-sized pieces.

      In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Toss in the fresh spinach, basil, and parsley, stirring until the spinach wilts.

          Return the sliced chicken to the skillet along with the cooked spaghetti, lemon zest, and lemon juice. If the mixture appears dry, gradually add reserved pasta water until you achieve a light, saucy consistency.

            Season with additional salt and pepper to taste, tossing everything together to combine evenly.

              Serve the pasta warm, garnished with a sprinkle of grated Parmesan cheese and a few extra herbs for a fresh touch.
