Light Mediterranean Chicken and Couscous Salad

2 boneless, skinless chicken breasts

1 cup couscous

1 ½ cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 red bell pepper, diced

1 cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Start by marinating the chicken. In a bowl, mix 2 tablespoons of olive oil, lemon juice, dried oregano, salt, and pepper. Add the chicken breasts, coating them well. Let them marinate for at least 30 minutes.

    While the chicken is marinating, prepare the couscous. In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

      In a large bowl, combine the fluffed couscous, halved cherry tomatoes, diced cucumber, red onion, red bell pepper, Kalamata olives, chopped parsley, and chopped mint.

        Once the chicken has marinated, heat a grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Let it rest for a few minutes, then slice it into strips.

          Drizzle the remaining olive oil over the couscous salad and toss gently to combine. Season with salt and pepper to taste.

            Top the salad with the sliced chicken and sprinkle feta cheese over everything before serving.
