1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 tablespoon poppy seeds

2 large eggs

½ cup plain yogurt

½ cup vegetable oil

Zest of 1 large lemon

¼ cup fresh lemon juice

1 teaspoon vanilla extract

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds until well combined.

      In another bowl, beat the eggs and then add the yogurt, vegetable oil, lemon zest, lemon juice, and vanilla extract. Mix well until smooth.

        Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Using a spoon or ice cream scoop, fill each muffin cup about two-thirds full with batter.

            Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.

              Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
