Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

2 lemons (zested and juiced)

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

6 cups mixed summer greens (arugula, spinach, and baby kale)

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 cup sliced almonds (toasted)

2 tablespoons balsamic vinegar

Instructions

Marinate Chicken: In a bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

Grill or Sear Chicken: Heat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Prepare Summer Greens Salad: In a large bowl, combine the mixed summer greens, cherry tomatoes, crumbled feta, and toasted almonds.

Make Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, and a pinch of salt and pepper.

Assemble the Dish: Slice the grilled chicken and place it atop the summer greens salad. Drizzle with the dressing and gently toss to combine.

Serve: Plate the salad on individual dishes, ensuring each has an ample serving of chicken and greens. Drizzle any remaining dressing over the top for extra flavor.
