Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar (for the cheesecake)

2 large eggs

1 tablespoon lemon zest

⅓ cup fresh lemon juice

1 teaspoon vanilla extract

¼ teaspoon salt

Powdered sugar (for dusting)

Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup sugar. Mix until well combined. Press the mixture into the bottom of a 9x9-inch baking pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool slightly.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add in the 1 cup of granulated sugar until well combined.

Add Eggs and Flavorings: Mix in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Then add the lemon zest, fresh lemon juice, vanilla extract, and salt. Mix on low speed until just combined.

Pour and Bake: Pour the cheesecake filling over the cooled crust, spreading it into an even layer. Bake in the preheated oven for 30-35 minutes, or until the center is just set and slightly wobbly (it will firm up as it cools).

Cool and Chill: Remove from the oven and let it cool at room temperature for about 1 hour. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

Serve: Once chilled, cut the cheesecake into bars. Dust with powdered sugar before serving to add a lovely finish.

Prep Time: 20 minutes | Total Time: 5 hours (including chilling) | Servings: 12 bars

                - Presentation Tips: Serve the bars on a stylish platter with lemon slices and fresh mint leaves for an elegant touch. Enjoy!
